True, but turkey bacon in no way compares to the salty, smokey, fatty goodness of real bacon (see above: Jaggers does food porn real good). A significant aspect to bacon is its fattiness, which carries a substantial amount of flavour. Beef fat (unless perhaps ox fat) can't deliver the same smooth, sweet flavour. Plus, the textures of the meat are different.

Beef bacon may carve out a niche for itself, but it will always be somewhat of a novelty product like turkey bacon. Not that this would stop me from trying it, possibly many, many times.
